Infinite Roots Acquires Bosque Foods to Build Dual-Technology Mycelium Platform

Hamburg-based Infinite Roots has acquired Berlin-founded Bosque Foods, combining submerged and solid-state fermentation capabilities under a single industrial platform.
The deal adds Bosque's solid-state fermentation process and whole-cut meat analogue expertise to Infinite Roots' existing submerged fermentation technology, expanding the combined IP and process data available for scale-up.
The acquisition reflects broader consolidation across the alternative protein sector, where regulatory delays and capital constraints have pushed over 70 companies into buy-outs, mergers, insolvency filings, or closures since September 2024.
Two Fermentation Technologies, One Platform
Hamburg-based Infinite Roots has acquired fellow German mycelium protein startup Bosque Foods for an undisclosed sum, bringing together two distinct approaches to growing protein from fungal biomass.
The transaction centers on complementary fermentation technologies. Infinite Roots uses submerged fermentation, a process in which edible mushroom strains, the same species available in supermarkets, are cultivated in a liquid nutrient medium inside steel tanks. Harvesting takes a couple of days, after which the mycelium is separated from the liquid and blended with natural seasonings. Bosque Foods, by contrast, developed a solid-state fermentation process, growing microbes on inoculated solid surfaces derived from low-value agrifood side streams. That process runs over ten days and was designed to produce whole-cut formats including chicken filets, pork filets, and bacon.

Infinite Roots' co-founder and CEO Mazen Rizk described the rationale in terms of integration rather than isolated advances, arguing that the next phase of mycelium development would be shaped by companies capable of combining biology, process data, intellectual property, and industrial implementation. Combining both companies' datasets and process expertise, he argued, would allow faster scale-up across a wider range of product formats.
Regulatory Pressure Behind the Deal
Bosque Foods' trajectory illustrates the difficulty of commercialising novel mycelium products within the European Union. The company closed a $3M seed round in 2022 and unveiled a chicken cutlet with 85% mycelium content in 2023. However, its Berlin-based subsidiary filed for insolvency in 2024 after the EU's novel food approval process prevented it from placing products on the European market within a commercially viable timeframe. Since then, Bosque had been operating solely through its New York office.
Infinite Roots has faced its own regulatory friction. The company had self-determined its oyster mushroom mycelium as Generally Recognized as Safe (GRAS) in the United States, but subsequently withdrew its evaluation request to the Food and Drug Administration, citing the need to update its safety dossier.

In Europe, the startup's inability to secure regulatory approval pushed it to diversify geographically: in 2024 it partnered with South Korean food company Pulmuone to launch mushroom-based meatballs and steaks under the Earth Diet brand. Back in Europe, it entered the German foodservice market with champignon mushroom meatballs and subsequently rolled out mushroom mince, meatballs, and patties at Rewe Group's Billa Plus and Billa Pflanzilla stores in Austria.
Consolidation Across the Sector
The Bosque acquisition is part of a visible pattern of consolidation in alternative proteins. More than 70 companies have been acquired, merged, filed for insolvency, or shut down since September 2024, according to Green Queen Media. Regulatory complexity and the capital intensity of fermentation scale-up have accelerated this restructuring, with larger or better-capitalised platforms absorbing the intellectual property and process knowledge of smaller firms that could not sustain independent operations.
Bosque founder Isabella Iglesias-Musachio framed the outcome as a continuation of her team's work rather than a termination of it, noting that Infinite Roots offers a broader industrial platform on which Bosque's technology can continue to develop. The deal transfers accumulated IP, process data, and product knowledge in whole-cut mycelium formats to a company with the infrastructure to take them further.

Infinite Roots is also extending its technical capabilities through a collaboration with the Hamburg University of Technology on converting whey into a fermentation feedstock, backed by a €2.6M grant from the German food and agriculture ministry. The project is consistent with a wider industry interest in using food-system waste streams to reduce the input costs of mycelium fermentation.
The acquisition occurs against a modestly improving backdrop for the sector in Europe. Fellow German firm Pacifico Biolabs secured €7M in Series A funding this week, while UK-based Adamo Foods received a €10M Horizon Europe grant. Whether combined technology platforms can navigate EU novel food approval faster than their predecessors attempted individually remains, for now, an open question.
