Formo Wins US GRAS Clearance for Precision-Fermented Casein Protein

  • German food tech startup Formo has obtained self-affirmed GRAS (Generally Recognized as Safe) status in the US for its precision-fermented αS1-casein, the most abundant protein fraction in cow's milk, enabling sales to American food manufacturers.

A German Startup Targets the US Protein Ingredient Market


Formo, a Frankfurt-based food technology company that has raised over €135 million to date, cleared a significant regulatory hurdle in December 2024 when it self-affirmed its precision-fermented casein protein as Generally Recognized as Safe under US FDA rules. The company has since notified the FDA formally under GRAS Notice GRN 1312 and expects a "no questions" letter from the agency later this year. According to Formo, this is the only precision-fermented casein currently in active scientific review in the US.


Precision fermentation involves inserting specific DNA sequences into microorganisms, in Formo's case a food-grade E. coli strain, to instruct them to produce a target molecule during fermentation. The resulting protein is then recovered through cell lysis, separation, and purification steps that fully remove the microorganism, yielding a single, well-characterised protein fraction. The process is an industrial one, not an agricultural one, which Formo's co-founder and CEO Raffael Wohlgensinger argues decouples production from the biological variability and supply disruptions that affect conventional dairy.

Why αS1-Casein, and Why Now


Casein accounts for roughly 80% of the protein in dairy milk and is responsible for the emulsification, gelation, and melt-and-stretch properties that make it commercially valuable. Formo has focused specifically on αS1-casein, which represents approximately 40% of total casein content and, according to the company, carries strong functional relevance across its target applications.


Initial characterisation data cited by Formo indicates superior functionality across a range of dairy applications, a complete essential amino acid profile, and advanced digestibility kinetics. The company is positioning the ingredient for performance and active nutrition formats, including high-protein products, satiety applications, and categories associated with GLP-1 and metabolic health, as well as advanced cheese applications and high-foamability barista milks. Formo states that its αS1-casein can be used at up to 25 grams per 100 grams in cheese alternatives. Infant formula and products under US Department of Agriculture jurisdiction are explicitly excluded from the current approved use cases.

The timing is notable. The US is experiencing a significant whey protein shortage, with contracts reportedly sold well into 2026 and prices rising. Wohlgensinger also points to supply risks from the ongoing H5N1 avian influenza outbreak and broader geopolitical pressures on dairy supply chains as structural drivers for alternatives with consistent, traceable production.

Commercialisation, Partnerships, and the GRAS Regulatory Backdrop


Formo has established a US subsidiary, entered a commercialisation partnership with RxFood Ingredients, and is actively sampling the ingredient with food and nutrition companies. The company's public commercial launch in the US market was planned for IFT FIRST in Chicago in July 2025. Formo has combined its own bioprocess development and pilot capabilities in Frankfurt with contract manufacturing partners for commercial-scale fermentation, though it has declined to name those partners or disclose production volumes.


The GRAS notice was filed jointly with Dutch startup Those Vegan Cowboys, following an R&D partnership announced in 2024 focused on casein optimisation and industrialisation. Formo states it will independently advance the technology going forward.




The regulatory backdrop carries some uncertainty. US Health Secretary Robert F. Kennedy Jr. has indicated an intention to eliminate the self-affirmed GRAS pathway, and the FDA has proposed a rule to remove it. New York legislators have also passed a bill targeting this mechanism. Formo has acknowledged the development and stated that its scientific dossier supports regulatory filings in additional jurisdictions, with the US work serving as a foundation for global market engagement.


Separately, Formo has discontinued its Frischhain consumer brand, a line of koji-protein cream cheeses sold through more than 3,500 Rewe and Billa stores in Germany, having sold over 300,000 units. The company describes the brand as having served its strategic purpose of validating consumer acceptance, with Formo now concentrating fully on its B2B specialty protein ingredient platform.


The company says it has sufficient runway for "years to come" and is not currently seeking additional investment.
