The mycelium, the vegetative part of fungi, boasts an impressive nutritional profile, comprising up to 60% protein (dry weight) and 12% fiber. What's more, the fibrous nature of mycelium allows it to undergo transformation into a texture remarkably akin to animal muscle fibers—an enticing prospect for the world of plant-based meat alternatives.


Beyond its protein content, mycoprotein emerges as a complete protein, replete with all the essential amino acids the human body requires. Approximately 55% of the protein content in these fungi is composed of amino acids, complemented by elevated levels of vital vitamins and minerals, including zinc, vitamin B, and vitamin D.



Mycorena's groundbreaking efforts recently received a significant boost in the form of €1.5 million in EU funding. This infusion of capital is earmarked for the development of cutting-edge technology aimed at creating 3D printable mycoprotein—a leap forward in culinary possibilities and sustainable nutrition.
